If you could simulate reactions that would be really neat for cash-strapped
schools or even beginning some chemistry at lower grade levels. Have a
small database of chemicals+properties like you are saying, then have a
simple method of oxidizing things, burning chemicals, and what not,
including the ever popular 'explosion' :) It's not the same as handling
chemicals, but maybe that's a good thing... I wouldn't imagine it would
be that complex if you do it in a simple manner.
