Scott,
    As a science teacher I'm admittedly biased, but I am most
impressed with some of the free science software available through
http://richtech.ca/seul (or follow the link to existing software on
seul.org/edu). Also, maybe you could bring along a few spare NICs and
if somebody is really a skeptic, pop one into their computer and let
them connect to the LTSP on the spot.
